Strawberry Mango Chia Parfait
This is a multi-layer muesli-like parfait that is great for breakfast or anytime!
Serves: 1-2 people
2 cups Frozen Strawberries
3 tbsp Chia Seeds
1/2 cup Coconut Water
1-2 diced Altaulfo Mangoes
1/2-3/4 cup Raw Oats (if you need this recipe to be gluten-free, make sure these are certified gluten free!)
Tip: For better digestion, soak raw oats in filtered or spring water for 12 hours for better digestion and nutrient assimilation.
1. Soak 3 tbsp of chia seeds in 5 tbsp coconut water for about 15 minutes.
2. Then, blend the strawberries, chia seeds, pitted dates, and coconut water together in a high speed blender until well-mixed (can be chunky).
3. Layer the strawberry chia seed mixture alternating with a layer or two of raw oats.
4. Add diced mangoes on top.
