Banana Shamrock Ice Cream!
This is such a fun, easy, and nutrient-rich recipe! There are two ways to make this recipe - in a food processor or in a blender. I find that using a food processor makes the ice cream more solid for longer, as opposed to a runny consistency. It is best to use a high-powered blender like a Vita-Mix or Blendtec, but, with patience and a little finesse, you can use a lower-powered blender as well.
Spinach is a mild green leafy vegetable and you don't really even notice the taste in this recipe! Enjoy!!
Depending on the serving size, it could serve 1-4 people.
Ingredients:
3 Frozen Spotted Bananas
1 handful Spinach
1 tsp Vanilla Extract (optional)
1 tsp Cinnamon (optional)
Directions - Food Processor:
Add all ingredients to the food processor base with the "s" blade in place. Pulse processor. At first, the texture will be crumbly and then it should get smooth. Add a small bit of water if needed to smooth out.
Directions - Blender:
Same ingredients as above, except add about 1/4 cup of filtered water. If you are using a Vita-Mix, be sure to use the tamper vigorously so that it comes out smooth.
If you are using a standard blender, you will need to do the following steps: First, cut the frozen banana in small chunks. Blend the spinach in water. Then, add a few pieces of banana at a time, pulsing it in until it is all smooth.
Scoop into serving bowls and top with sunflower sprouts for a "shamrock" feel!
