Hummus and Whole Grain Stuffed Mushrooms Recipe



This super duper yummy recipe is super simple as well!

Yields: 4

Ingredients

4 medium Portobello Mushrooms

1 cup Hummus, fresh* or store-bought (can be original or make it more interesting by choosing your favorite flavor)

1 cup Whole Grain, such as farro, wheat berries, freekah, or oats. Quinoa would work as well.

2-3 tbsp of Avocado Oil (or another oil with a high smoke-point)

(For those who want to avoid grains, simply leave them out)

Directions

Pre-heat oven to 350 degrees farenheit. Detach stems from portobello mushrooms and saute in a pan on the stove for a few moments in about half the amount of avocado oil. In a bowl, stir the hummus and whole grain together so that it is combined evenly. Once the mushrooms are finished sauteing, evenly fill each mushroom with the hummus and grain mixture. Use the rest of the avocado oil to cover the bottom of the baking pan. Bake for about 10 minutes or until the mushrooms are cooked through.

*I love to make my own hummus or find fresh hummus made locally in the area with a beneficial oil, such as olive, rather than canola oil. Since this recipe IS heated, I would make my own hummus with avocado oil or another oil with a higher smoke-point. Hummus recipe coming soon!
