Part 2: What do I do with all these ZUCCHINI?! Answer: Zucchini Hummus!
Alright! The second installment to figure out what we should do with the zucchini!! For this particular recipe, I used one green squash. If you use a large zucchini than the average green squash size, you can double the recipe!
High power blender
1 Green Squash
Juice from 1 Lemon
1/2 tsp Sea Salt or more to taste
1 clove Garlic (or 1 tsp Garlic Powder)
1 tsp Cumin
1 tsp Paprika
1/2 cup Raw Tahini
2 tbsp Extra Virgin Olive Oil
1/4 cup Raw Sesame Seeds
Peel zucchini and roughly chop it. Add it to the blender with the lemon juice, sea salt, garlic, garlic, cumin, paprika, raw tahini, sesame seeds, and olive oil. Blend on high for about 30 seconds to 1 minute until smooth.
